Keeping an eye on the dough is the only way to make sure our bagels start off on the right foot. With a steady, even temperature, the dough will rise to perfection. If the batch gets too hot, the yeast can die, and if the temperature drops, the dough won’t rise properly. We watch our dough constantly.
After the yeast has risen, it’s time to form the bagels into the donut shape that we love so much. Any bagels that are not up-to-par are discarded, making sure that our stock will stay uniform and appealing to any customer.
Proofing is the next step, and it’s just as monitored as the first. Afterwards, the bagels are cooled gently to make sure the dough won’t fall and turn sour before the next stage.
This step is quickly followed by the next, where the bagels are boiled for a short time. This process, called ‘kettling’, preserves the soft inside of the bagel while creating the perfect crust on the outside. There is a lot of room for mistakes here, so any over-boiled or misshapen bagels are discarded.
Baking is the last step, and arguably the most important one. After being removed from the kettle, the bagels are sprinkled with toppings and set to bake on trays. Contrary to popular belief, bagels are actually baked upside-down, to make sure that they are cooked thoroughly without burning the toppings.
